Marinated Red Cabbage Slaw with Pine Nuts and Leek

- Combine cabbage, onion, pomegranate seeds, leek, cranberries, coconut sugar, balsamic vinegar and olive oil in a bowl. Cover and chill for 3 hours or overnight to marinate.
- When ready to serve, add in toasted pine nuts. Season and toss to combine.

This reminds me of when I had a German neighbor who was very ill and we were taking meals to her. I wanted to make a German meal for her and so did my research. One of the things I made for her was called Rottkohl mit Apfel (or something like that). We are going to love this slaw!

I love red cabbage, but I don't think I have ever made it as salad, it is usually stewed as a side dish or with chicken. I will keep this in mind, it is a great idea for a winter salad.

What a coincidence, Angie, I just made a simple red cabbage slaw for dinner last night. Mine didn't have the fancy inclusions as yours does but it was so tasty; I just used green onions and dill and for the dressing, I just heated some plain white vinegar with unsweetened apple sauce - we're watching our sugar intake). I just love the colour of your salad, it would really cheer me up on such a gloomy day.
