Zucchini Buckwheat Pancakes


These zucchini pancakes are prepared with grated zucchini and a hint of cheddar cheese. Serve them with a dollop of sour cream. This is much easier to persuade your kids or your picky hubby to eat their veggies. And if you are growing zucchini, then this is also one very delicious way to use up a lot at once. I used the mild cheddar, which is matured about 4 months, for the recipe, but Feta, or parmesan would work great too.


  • 300 g Zucchini, grated
  • 2 Shallots, finely chopped
  • 2 Eggs
  • 60 g Cheddar, grated
  • 1 tbsp Parsley, chopped
  • 1 tbsp Spring onion, chopped
  1. Grate the zucchini into a mixing bowl. Stir in the finely chopped shallots, eggs, cheddar, parsley, spring onion, and garlic. Stir in the buckwheat and wholewheat flours, salt, and pepper.
  2. Heat the oil in a large skillet over medium heat. Drop tablespoons of the batter into the skillet. Cook the pancakes two minutes on each side until browned. Place the pancakes on a sheet pan and keep warm in the oven. Continue to pan-fry the pancakes until all the batter is used.

These are delicious and almost like the Greek ones we call kolokythokeftedes. I have posted the recipe in the early stages of blogging back in 2007. I admit that other than eggplant, zucchini is another vegetable that I seldom use. The Western dishes which often served them steamed may have spoiled it for me. When I see you make pancakes out of zucchini, I can't find any reasons to resist or reject them as they look very delectable.

Oh yes, one can never have too many ways to use up zucchini. I know of what you speak. Thanks for supplying me with another one. I like the addition of cheese in this.

Of course, the same principle goes for okra. Yummy Yummy Slimey Prolific Okra. One needs a lot of creative recipes for that veggie too.

Growing up with latkes, I'm a huge fan of any kind of fried veggie pancake. Sweet potato, zucchini... it's all so tasty. These look fantastic!

Cinnamon-Girl: poor Moon, it's going to be hard for both of you. I put Hermes' food on a higher shelf, so he will have to stand up to get them each time. We even got a "Slim Cat" food distributor ball, so he must roll the ball to get the food out. I have been getting lots of scratches on the legs and behind from Hermes because he is hungry 24-7.

I had a zucchini fritter recipe I used to love making all the time. Then I accidentally misplaced the recipe one day and haven't been able to replicate the fritters since. Might give yours a go as they look fantastic, and I love baking/cooking with buckwheat flour.
