Crustless Cherry Radish Quiche

A crustless quiche is quite simply baked eggs (just like Italian frittata) and literally anything else you want to throw in, but no fussy pastry to chill or roll. It’s easy, delicious, naturally gluten free and perfect for breakfast, brunch or picnic. Don’t toss those peppery radish greens which are great in salads, blended into pesto or saute them just like you sauteed spinach. I have turned the radish tops into a pesto and served with quiche. A zero waste meal!

 
Radish Greens Pesto
  • 200 g Cherry radishes
  • 50 g Freshly grated Parmesan
  • 5 Eggs, medium
  • 180 g Labneh
  • 100 ml Heavy cream (or milk)
  • Sea salt and freshly milled black pepper
  • A few grinds of freshly grated nutmeg
  • 80 g Radish greens, washed and dried
  • 20 g Mint leaves, washed and dried
  • 4 Garlic cloves, chopped
  • 2 tbsp Freshly squeezed lemon juice
  • 40 g Almonds, chopped
  • 2-3 tbso Freshly grated Parmesan cheese
  • 100 ml Extra-virgin olive oil, plus more as needed
  • Salt and freshly milled black pepper, to taste
  1. Wash the cherry radishes, remove the tops for pesto and thinly slice the radishes. Wash the tender radish leaves, shake them dry and set aside.
  2. Heat the oven to 190C/375F. Lightly coat a square or round 9-inch pie pan with a little butter or oil.
  3. Finely grate the Parmesan. Whisk together the eggs, grated Parmesan, labneh, and heavy cream thoroughly until no streaks of egg remain, then season with salt, pepper and nutmeg.
  4. Arrange 2/3 of the radish slices at the bottom of your pie pan and pour the egg mixture over them. Arrange the remaining slices on top. Bake on the lowest shelf for about 40-45 minutes golden and puffy.
  5. Meanwhile, place all the ingredients for the pesto in a food processor or blender. Process until smooth, scraping down the sides as needed. Add additional olive oil to achieve desired consistency. Season to taste with salt and black pepper.
  6. Slice the quiche and serve with pesto. Leftovers can be refrigerated in an airtight container for up to 4 days.

I am in the epicenter of white asparagus now, and I’m having a wonderful time trying it in various ways. But I’ve also seen radishes here, so maybe I’ll get a chance to make a quiche in the next day or so.

I love quiche, and I love radishes, but I never thought to put the two together. I also hate to admit it, but I have been throwing radish greens in the compost bin. I had no idea that you could make pesto out of those. I’m going to be trying both of those recipes.
