Chicken all'Arrabbiata, (meaning“in an angry style” in Italian and referromg to the spicy character of the sauce) is a high protein take on the famous Italian pasta sauce. Bone in skin on chicken thighs are first seared, then simmered in a bold and spicy tomato sauce, and topped with fresh marjoram leaves--a rustic Italian one-pan dish perfect for weeknight meals.

 
  • 6 Chicken thighs, skin on, bone in
  • Salt and freshly milled black pepper
  • 3 tbsp Olive oil
  • 1 Red onion, diced (or 2 shallots)
  • 6 Large garlic cloves, minced
  • 1½-2 tsp Crushed red pepper flakes
  • 1 Bay leaf
  • 1 Large red bell pepper, diced
  • 1 Small poblano, diced
  • 1 tbsp Tomato paste
  • 250 ml Dry white wine
  • 1 canx400 g Chopped tomatoes
  • 2 tbsp Red wine vinegar
  • 2-3 Marjoram sprigs, plus 1 tablespoon chopped marjoram leaves
  1. Preheat the oven to 200C/400F. Season the chicken with salt and pepper.
  2. In a large ovenproof skillet, heat the olive oil until shimmering. Add the chicken skin side down and cook over moderately high heat, turning once, until browned, 7 minutes. Transfer the chicken to a platter and set aside.
  3. Pour off all but 2 tablespoons of fat from the skillet. Add the onion, garlic, crushed red pepper flakes and bay leaf and cook over moderate heat, stirring, until the onion is softened. Add the diced bell pepper and poblano and cook until softened. Stir in the tomato paste and cook for 1 minute.
  4. Add the wine and boil for 2 minutes, scraping up any browned bits from the bottom of the skillet. Add the chopped tomatoes and their juices, the red wine vinegar and marjoram sprigs and bring to a simmer.
  5. Return the chicken thighs in the skillet with skin side up. Bake in the upper third of the oven for 35 minutes, until the chicken is cooked through. Discard the marjoram sprigs and season the sauce with salt and pepper. Garnish with the chopped marjoram and serve warm over some soft polenta or pasta if desired.
