Moroccan Carrot Salad with Savoury Granola

A refreshing and vibrant salad combining crunchy carrots, peppery arugula, and juicy oranges is so versatile and can be enjoyed all year round. Use young and organic carrots if possible.
The savory granola with walnuts, seeds, and ras el hanout is full of wonderful flavours and add a delicious crunch to this Moroccan carrot salad. I strongly recommend you to double the granola and save some for roasted vegetables, cheese, soups or simply as a snack. Store in an air-tight jar in room temperature for up to a month.

 
Savoury Granola
  • 50 g Rolled oats
  • 40 g Walnuts, roughly chopped or pistachios
  • 15 g Sunflower seeds
  • 15 g Sesame seeds
  • ¾ tsp Fennel seeds
  • ¾ tsp Ras el hanout (or Moroccan blend)
  • A pinch of flaked sea salt
  • ½ Egg white
  • 1 tbsp Olive oil
  • 1 tbsp Maple syrup
  • 50-60 g Arugula leaves
  • 2-3 Carrots, peeled then shaved into strips
  • 2 Oranges, peeled and segmented
  • 1 Preserved lemon, pith removed and skin thinly sliced
  • 2 tbsp Extra-virgin olive oil
  • Juice of 1 lemon
  • ½ tsp Ras el hanout (or Moroccan blend)
  • ½ tbsp Maple syrup (or sugar)
  • Sea salt
  1. Preheat the oven to 200C/400F. Mix together all the granola ingredients in a bowl, stirring well to make sure that the oats, nuts and seeds are well coated. Spread out evenly on a lined baking sheet and bake for 12-15 minutes, shaking halfway, until crisp and golden. Leave to cool.
  2. Tip the arugula into a mixing bowl. Add the carrot shavings, orange segments and preserved lemon.
  3. Whisk together the olive oil, lemon juice, ras el hanout, maple syrup and a good pinch of salt. Pour the dressing over the salad, toss and transfer to a serving dish. Scatter a generous handful of granola over the salad and serve.

A lovely mix indeed with that granola minus the orange. We will soon all be eating just carrots given how expensive everything else has become even though it is spring, tomatoes are scandalous 5 euro a kilo right now in my country, we will all die of hunger!
