Lamb Chops with Salsa Verde

For a quick 30-minute meal you really can't beat these delicious spiced lamb chops with a homemade salsa verde, which takes this dish to whole new level of deliciousness. If desired, serve them with a delicious medley of roasted vegetables or some cauliflower rice for a healthy and nutritious low carb dinner.

 
Salsa Verde
  • 8 Lamb chops
  • Sea salt and freshly milled black pepper
  • ¾ tsp Cumin powder
  • 1½ tsp Turmeric powder
  • Tallow
  • A handful lamb’s lettuce or arugula
  • 1 tbsp Pomegranate seeds
  • 40 g Fresh herbs (I used a mixture of basil, mint and parsley leaves)
  • 2 tsp Dried tarragon
  • 2 tbsp Capers
  • 1 tbsp Caper juice
  • 4 Anchovies
  • 2 Garlic cloves, chopped
  • 1 tsp Dijon mustard
  • 120 ml Olive oil
  • Sea salt and freshly milled black pepper
  1. Season the lamb with salt and pepper then sprinkle with the cumin and turmeric.
  2. Heat a little tallow in a skillet and when hot, cook the lamb chops for about 2 minutes each side for medium-rare or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest.
  3. Meanwhile, put all the ingredients for the salsa verde in a food processor, season and process until smooth and bright green.
  4. Serve the lamb chops with lamb’s lettuce or rocket leaves and pomegranate seeds, and drizzle with the salsa verde.
