Balinese Roasted Chicken Wings

Crispy, juicy chicken wings marinated with aromatic spices – this straightforward roasted chicken recipe brings together the fragrance of galangal, kaffir lime leaves and lemongrass (essential ingredients in Indonesian kitchen together with shallots and garlic) with succulent chicken wings, then baked to the crispy perfection.
If you can’t find lime leaves and galangal, bay leaf and fresh ginger are good substitutes. For 1 lemongrass, use 1 teaspoon of lemon zest and ½ teaspoon of grated ginger. Deseed the red chilli if you can't handle the heat!

 
  • 1.5 kg Chicken wings without tips
  • 8 Garlic cloves, coarsely chopped
  • 4 French shallots, peeled, coarsely chopped
  • 2 Lemongrass sticks, white part only, thinly sliced
  • 3-4 Kaffir lime leaves
  • 1 Long fresh red chilli, coarsely chopped, plus extra sliced chilli, to serve
  • 5 cm Galangal, peeled, coarsely chopped
  • 60 ml Coconut oil, melted
  • 2 tbsp Fish sauce
  • 1/2 tsp Ground coriander
  • 1/2 tsp Ground turmeric
  • 2 Limes, halved
  • 1 Lebanese cucumber, halved, sliced diagonally
  • Fresh coriander sprigs, to serve
  1. Place garlic, shallot, lemongrass, lime leaves, chilli, ginger, melted coconut oil, fish sauce, ground coriander and turmeric in a food processor. Blend until smooth.
  2. Transfer the marinade mixture to a large glass or ceramic bowl. Add the chicken wings and turn to coat well. Cover and place in the fridge for 6 hours or overnight to marinate.
  3. Preheat the oven to 220C/430F. Place the chicken wings on a large baking tray lined with aluminium foil. Bake for 30 minutes until wings are golden crispy and cooked through.
  4. Meanwhile, place limes cut-side down on a grill pan and cook for 3-4 minutes or until lightly charred.
  5. Serve chicken with grilled limes and cucumber. Scatter with coriander leaves and extra chilli just before serving.
