Haupia - Hawaiian Coconut Pudding

Haupia is a popular traditional Hawaiian dessert made from coconut milk, cornstarch and sugar. This naturally gluten free coconut pudding is very simple and takes just 10 minutes to make and doesn't require an oven. The silky, creamy haupia tastes fantastic and have a fine consistency somewhere between pudding and panna cotta. Traditionally, the haupia are cubed and served plain. But you can also garnish them with fresh fruit or fruit sauces (I used mango here). If you are going to serve them in glasses, garnish them with some caramelised pineapples and/or toasted sesames since both are important ingredients in Hawaiian cuisine.

 
HaupiaTo Serve
  • 35 g Cornstarch
  • 120 ml Water
  • 400 ml Coconut cream
  • 50 g Erythritol
  • Coconut oil for the form
  • 1 Ripe mango
  • 1 Lime, zested and juiced
  • Coconut flakes
  • Coconut chips
  • Fresh fruit
  1. Use coconut oil to lightly grease a rectangular 20x12x4cm glass container or silicone muffin cups. There’s no need to grease the individual moulds if you plan to serve them in glasses or souffle cups.
  2. Mix the cornstarch and water in a small bowl with a spoon until smooth.
  3. Heat the coconut milk and erythritol in a small saucepan over a medium heat, stirring until the coconut milk starts to simmer.
  4. Stir the starch water again, as the starch will settle to the bottom, and then slowly stir it into the coconut milk using a whisk.
  5. Reduce the heat so that the coconut mixture only simmers gently and allow to thicken while stirring, 1-2 minutes.
  6. Pour the mixture into the prepared pan immediately, smooth out and leave to cool for 30 minutes. Cover and chill overnight to firm up.
  7. Remove the mango flesh from the stone, peel and cut half into thin wedges. Puree the rest of the mango. Wash the lime thoroughly, pat dry and finely grate the zest. Squeeze lime to extract the juice. Mix the mango puree with the lime juice.
  8. Turn the well-chilled haupia out onto a plate and cut into 5 cm cubes. Serve with mango puree and mango slices. Sprinkle with coconut flakes, chips and lime zest. Serve with extra fruit.

You share some of the most interesting food/desserts! I love the idea that this can be made quickly and doesn't require the oven. Of course it's also gluten-free which works for me.
