Baby Spinach Salad with Avocado and Blackberries

Make the most of fresh seasonal produce with this easy, but scrumptious spring salad. If you haven’t tried pairing fruit with your salad before, you are missing out. Seasonal fruits add not only colour, but also right amount of sweetness and texture to an otherwise boring green salad. Feel free to substitute baby spinach with other leafy greens.

 
Vinaigrette
  • 120 g Baby spinach
  • 2 Mini cucumbers, sliced thinly
  • 250 g Blackberries
  • 1 Ripe but firm avocado, sliced
  • 75 g Blanched hazelnuts, toasted and roughly chopped
  • 50 g Feta cheese
  • 90 ml Extra-virgin olive oil
  • 2 tbsp Freshly squeezed lime juice
  • 1 tbsp Honey
  • 2 tbsp Flat parsley, finely chopped
  • Salt and black pepper
  1. Whisk together all ingredients for vinaigrette. Taste and season with salt and pepper.
  2. Place baby spinach and cucumber slices in a large salad bowl and gently toss with half of the dressing.
  3. Arrange them in a large serving platter. Top with blackberries and avocados, then sprinkle the hazelnuts and feta cheese over. Drizzle the remaining dressing over and enjoy!

Pena que no he visto moras por aquí.
Pero coincidentemente he venido comiendo ensaladas varias, usando aguacate, repollo violeta, pepinos, cebolla morada, rúcula, etc.
