Packed full of flavour and nutrients, you will want to make this superfood salad, adapted from Delicious, time and time again! Edamame are naturally gluten-free and low in calories. Unlike most plants, edamame soybeans are a whole protein source that provides all the essential amino acids, many essential vitamins and minerals the body needs.
Salad | Pickled Lmon Skin |
- 150 g Mixed quinoa, rinsed, drained
- 2 tbsp Extra virgin olive oil
- 300 g Shelled frozen edamame
- 20 g Chives, chopped
- Dill, mint and flat-leaf parsley leaves, to serve

- Zest of 2 lemons, thinly sliced
- 125 ml Apple cider vinegar
- 50 g Caster sugar
- 1 tbsp Coriander seeds
- 60 ml Water

- For the pickled lemon skin, place lemon zest in a heatproof bowl. Place vinegar, sugar, coriander seeds and water in a saucepan. Bring to the boil and simmer for 2 minutes. Pour hot vinegar mixture over zest, set aside to cool completely.
- Meanwhile, cook quinoa according to packet instructions, then spread onto a baking tray and set aside to cool slightly.
- Bring a medium saucepan of water to a boil over high heat. Once the water is boiling, add the frozen edamame (do not thaw), plus one teaspoon of salt. Cook the edamame for 3-5 minutes. Drain and rinse in cold water. Drain again.
- To make the dressing, whisk olive oil and 60 ml pickled lemon liquid in a bowl until well combined. Transfer quinoa to a bowl and toss through edamame, chives and dressing. Spread quinoa mixture onto a platter and scatter with drained lemon zest, dill, mint and parsley.
