Sweet, tangy, sticky, and spicy, this versatile and quick condiment is ready in under an hour and made from figs, shallots, garlic, rosemary and spices. Figs are perfect for chutney because they are sweet enough when fully ripened and go wonderfully with sharp star anise and fiery chilli. To give the chutney an even more intense flavour, I also added some dried figs. Enjoy it alongside pâté crackers and your favourite cheese.

 

Fig Chutney

  • 700 g Fresh ripe figs, cut into small pieces
  • 50 g Dried figs, cut into small pieces
  • 2 Large shallots, peeled and finely chopped
  • 2 Garlic cloves, peeled and minced
  • 1 Chilli pepper, deseeded and finely chopped
  • 3 tbsp Olive oil
  • 1 Star anise
  • 1 Rosemary sprig
  • 100 g Coconut sugar or dark brown sugar
  • 100 ml Apple cider vinegar
  • 1 tsp Cinnamon powder
  • Freshly milled black pepper
  1. Wash and dice the fresh figs. Cut the dried figs into small cubes too. Peel and finely dice the onions and garlic cloves. Deseed the chilli pepper and finely chop.
  2. Heat the olive oil in a pan over medium heat. Sauté the shallots, garlic, chilli, star anise and rosemary until shallots are soft and the mixture smells fragrant, about 5 minutes.
  3. Add the figs and the remaining ingredients. Simmer for about 45 minutes. Keep stirring throughout the whole cooking process, especially towards the end.
  4. Remove the rosemary sprig and star anise. Pour the chutney into sterilised jars while still hot and seal immediately. Store them properly in a cool dark place and it will last at least a year. Once opened, stored in the fridge and finish it in 2-3 weeks.

You are on the roll with da figs, Angie :) I actually saw frisch figs at Lidl today (went to buy pickled beets which are on a massive discount) but the price was like a euro for one fruit, not a kilo, one fruit LOL I was like what da what?

good morning, sounds delicious I have never seen fresh figs in our stores near me mostly only see dried figs in stores at christmas time. but I do buy premium dried fruits online at nuts,com I love dates too
