- Preheat the oven to 180C/350F. Place all the ingredients, except the water, for the spice paste, in a food processor and blitz until well chopped but not totally smooth. Add the water and pulse to combine.
- Season the chicken legs with salt. Combine the spices in a bowl then sprinkle all over the chicken so it is well coated.
- Heat the olive oil in a large frying pan over a medium-low heat and brown the chicken on both sides. Take your time doing this so the spices won't burn in the pan. Place on a large baking tray along with the onion, chillies and pumpkin. Season the vegetables with salt and pepper.
- Add the spice paste to the pan and cook for 5 minutes, stirring often until fragrant. Season with salt then pour over the chicken and vegetables.
- Roast for about 45 minutes or until the chicken is fully cooked. Combine the coconut and cashews and sprinkle over the top, serving the rest separately. Garnish with fresh cilantro.

Yo no les pondría mucho picante y a lo mejor alguna especia menos, pero todo lo demás me parece perfecto para conseguir una carne sabrosa y bien cocinada.

A wonderful recipe. We have a bottle of Sambal olek in our fridge, but not sure where I can get coconut sugar from. I'll check more thoroughly at the supermarket next time I go there. Thanks Angie, you brighten my cooking days with these delicious dishes.

Wow, this chicken looks and sounds phenomenal! And cashews and coconut make such wonderful additions.
I love a chicken traybake, and pumpkin goes so well with chicken. Great flavours here! You can't go wrong with ginger and garlic and chillies!
I love this recipe so much, the mix of flavours is so peculiar but seems so tasty at the last time! I should try ASAP (and buy sambal olek ASAP too ^^)
Another beautiful chicken dish. I love tray bakes as they are so simple and so flavorful. I am so glad you use sambal oelek. It’s one of my favorite chili paste, and it’s so versatile. The cashew in coconut sound absolutely luxurious. David (C&L)
