This easy keto quiche recipe starts with a pork rind crust, but you can use a regular quiche crust if you ain't on keto or low carbs diet. It’s loaded with roasted pork belly, 3 different kinds of cheese (Spanish Manchego, Dutch Old Amsterdam, and English vintage Cheddar) and spring onions and is perfect for brunch or dinner! You can use other cheese (Cheddar, Gouda and Gorgonzola), add other seasonings and replace pork belly with leftover roasted chicken or ham.

- Preheat oven to 190C/375F. Lightly grease a 8 inch / 24 cm springform pan.
- Prepare the pork rind crust and press into the bottom and 3-4cm up the sides the prepared springform pan. Line the crust with baking paper and fill with pie weights (I used chickpeas). Bake for 15 minutes.
- Meanwhile, whisk together eggs, cream, salt and pepper in a bowl.
- Remove the pie weights and scatter the chopped roasted bacon, spring onions and 125 grams manchego curado cheese into the crust. Pour the egg mixture over and sprinkle the old amsterdam and vintage cheddar on the top of the egg mixture.
- Bake for 35-40 minutes until the center is completely set. Let cool for 5-10 minutes before slicing and serving.

I have just learned a few days ago that putting beans over your dough is called blind baking. I bought some leek and sweet potato and celery today and will make risotto with it tomorrow.
We have lots of cheese in the house - more than three types in fact - so this is a real possibility.
