Scotch eggs, a classic British pub food, are soft or hard-boiled eggs encased in sausage meat, breaded and fried or baked. (https://angiesrecipes.blogspot.com/2021/03/baharat-lamb-scotch-eggs.html) This meat-free version of Scotch egg recipe makes a creative Middle Eastern spin on this classic snack (or appetizer) and we are speeding it up by using an organic ready made falafel mix.
Making your own falafel is not diffcult, it just takes time. If you are interested in making your own, here are a few of falafel recipes that I shared on my blog before.
- Pumpkin Falafels
- Green Pea Falafels using frozen peas

- Cauliflower Falafel
- Broccoli Mung Bean Falafel

- Bring a large saucepan of water to a boil over high heat. Gently lower the eggs into the saucepan and cook for 6 minutes for soft boiled, or until cooked to your liking. Drain and transfer to a bowl of cold water. Set aside for 2 minutes or when cool enough to handle, peel the eggs and set aside.
- Preheat the oven to 190C/375F. Line a baking tray with parchment paper or brush with olive oil.
- In a large bowl, add in falafel mix and water. Mix together and set aside for 15 minutes or up to 3 days, covered tightly, in the fridge.
- Divide the mixture into 8 portions. Place one egg in the middle of each portion of falafel mixture, forming it into a ball around each egg. Place it in the prepared baking tray. Repeat with the remaining portions.
- Brush each scotch egg with olive oil and bake in the upper rack of the hot oven for 18 minutes until golden brown and crispy. Serve with your favourite salad, tahini dressing, mayonnaise or ketchup.

I love falafel, it looks gorgeous I would like to try them so much!
You may invite me to dinner with this menu! I have seen those ready made falafel mixes in DM but they are crazy expensive, sadly as is everything else from their healthy food offer. It also pisses me off that they keep their veggie vursts in the shelf not in the fridge. Even when it is vacuum packed, I ain't eating it from the shelf!

Years ago I used to make conventional Scotch eggs, but we no longer eat red meat, so this would be a great substitute - and very enjoyable too.
