Ready in 20 minutes, this colourful arugula salad with ruby red grapefruit, edamame (green soya beans), avocadao, Prosciutto and toasted pecans is all you need to be eating a healthy, nourishing salad for dinner tonight. Edamame are soya beans that are harvested and picked when the fuzzy pods are tender and green. They are naturally gluten-free and add a protein boost to your food. If you can't find shelled edamame beans, don't worry— use broad beans instead.

- Fill a medium pot with water and bring to a boil. Add in salt and frozen shelled edamame. Cook 3-5 minutes. Drain the edamame and rinse with cold running water. Drain again and set aside.
- Place olive oil and apple cider vinegar in a small bowl. Season with salt and pepper. Stir to combine.
- Place baby arugula on a serving plate. Arrange grapefruit segments, edamame, avocado and prosciutto on top. Drizzle with dressing and crush the roasted pecans over. Serve immediately.

Sounds like a really refreshing salad dish, although I might have to substitute the grapefruit for something else, as hubby isn't allowed to eat that.
I have never heard of edamame beans before, so was hoping you would explain what they were. However before I got that far, I did think they looked very much like broad beans, which is what you confirmed, so that's what I would use.

Never had me some edamame but would like to try. We only have one producer who sells them frosen but they are very expensive, like 3 or 4 euro for 350g. Not paying that much for a handful of beans LOL
