Tuna and Avocado Salad with Caesar Dressing

Jazz up a humble can of omega-3 fatty acids rich tuna with this easy avocado tuna salad recipe. Silky avocado adds creaminess that's cut with a hit of tanginess from caper apples and a pleasant bitterness from radicchio. Perfect for a quick and light lunch or dinner. You can easily turn this simple salad into a more substantial, hearty, texture-rich dish by adding some cooked whole grains (such as quinoa, barley, or buckwheat).

 
SaladCaesar Dressing
  • 1 Small radicchio
  • 1 Ripe but firm avocado
  • 1 can / 185 g Tuna in its own juice, drained
  • Caper apples
  • 1 tbsp Fresh dill, chopped
  • 1 tbsp Pomegranate seeds
  • 2 Garlic cloves
  • 1 Anchovy fillet
  • Juice of 1 lemon
  • A few drops of Worcestershire sauce
  • 1/2 cup Homemade mayonnaise
  • 2 tbsp Parmigiano-Reggiano, grated
  • 2 tbsp Water
  • Freshly milled black pepper
  1. Place the garlic, anchovy, lemon juice, Worcestershire sauce, mayonnaise, Parmesan and water in a processor, and process until you have a loose dressing. Season with freshly milled black pepper.
  2. Wash the radicchio and spin it dry. Tear the leaves smaller if necessary. Halve and pit the avocados, remove the flesh from the skins, cut into wedges and arrange on a serving platter with the radicchio and tuna.
  3. Top with caper apples, chopped dill and pomegranate seeds. Serve with the prepared caesar dressing.

A very colourful and appetizing salad I shall certainly try - like both radicchio and avocado . . . That said I am keeping my usage of tuna well-and-truly down because of the mercury problem associated with it. No wish to get Alzheimer's or a number of other diseases. A fact which I only learned at lectures a few days ago - salmon is safer because the fish has a smaller mouth and ingests less 'trouble' - fact !!!
