This salad recipe, which gets an earthy boost from the addition of truffles and lean tasty protein from shrimp, is deliciously juicy and crunchy and the perfect way to get a load of veggies in with amazing flavour and to enjoy the incredible health benefits of the radish.

- Peel and slice white radish into thin rounds using a mandolin slicer. Toss with 1/2 teaspoon salt for about 30 minutes. Meanwhile, slice the cherry radishes.
- Whisk the ginger, vinegar, and salt in a large bowl. Slowly whisk in the sunflower oil and sesame oil until blended.
- Toss shrimp with 1/2 tablespoon sunflower oil and 1/8 teaspoon pepper. Heat a skillet over medium-high heat until hot, then cook shrimp, turning once, until just cooked through, about 2 minutes. Transfer to a plate.
- Stir shrimp into the dressing. Drain white radish well. Rinse and pat dry and place them and sliced cherry radishes in serving plates. Top with shrimp and grated truffles. Serve drizzled with some of remaining dressing and chopped cilantro.

I’ve never had a radish salad, but I know I would love it. I participated in a raw diet for a week and used radish to add spice to soup and other recipes. That’s when my love affair started, and I just can’t get enough of these spicy little bulbs. I’m also a huge fan of truffles, so this recipe seems like it was created just for me :)
I can almost taste the fresh, clean flavour of this unique salad. It look perfect for summer, fortunately, we are having unseasonably warm November days in Toronto so I can definitely imagine having this for lunch soon (before the snow flies!).

We ate a lot of shrimp on our recent travels, but nothing as unique and elegant as this. Being a huge shrimp and radish lover, this salad intrigues me. Thanks Angie for such a simple and tasty salad!
I thought I was the only one who could appreciate a salad made primarily of radishes....so I'm happy to see you make this beauty! I've not seen white radishes in the markets here. But I'm hoping to plant a variety next spring of those that are hard to find. LOVE that toasted sesame ginger dressing!
