Chewy, filling, and packed with natural energy, these oaty nutty muesli bars are made with immune-boosting bee pollen, coconut, almonds, chia, and honey. They are a good source of carbohydrates, protein, healthful fat and fiber. Take them camping, pack in lunch box or as breakfast on the go!
Coconut, Bee Pollen, Oat and Chia Muesli Bars

- Preheat oven to 180C/350F. Place the coconut oil, honey and sugar in a small saucepan over low heat and cook, stirring, for 3–4 minutes or until melted and combined.
- Pour into a large bowl and add the oats, coconut, bee pollen, almonds, chia seeds, dates and cinnamon and mix well to combine.
- Spoon into a lightly greased 20cm x 30cm baking pan lined with non-stick baking paper. Flatten the mixture using the back of a spoon. Bake for 25 minutes or until dark golden. Set aside to cool completely. Lift the slice from the pan and cut into bars to serve.

Oh my..fantastic! What a great idea to add bee pollen.. a real superfood. I just saw it at an organic health shop and I was tempted to buy it. My grandad used to have bees and I had pollen all the time when I was growing up. So good for you.

I love this Angie. I'm going to be making some granola bars today as well but love the sound of the bee pollen. I've never used that before. I wonder if those allergic to bees would have a reaction? I would imagine they would. I'll have to check that out. Great recipe and perfect for summer hikes.

I started making oat-bars at home recently and really like the idea of having these convenient homemade bars on-the-go. Usually I skip the wet process and instead use quick-cook oats or fine oats (oat bran) with a little water plus peanut butter as the "binding" agent. I also skip the baking step, and just "set" the mixture in the fridge. Of course, they(my homemade bars) don't turn out as beautiful and perfect as yours.
