Sprouted Chickpea Salad with Pesto Yoghurt Sauce

Chickpeas, also known as Garbanzo beans, are a legume and contain high levels of phytic acid and enzyme inhibitors that can make legumes hard to digest. Sprouting process will help neutralize or eliminate all of these problems, while enhancing the nutrient content.
Alive and full of nutrients, this simple sprouted chickpea salad with pesto yoghurt sauce is perfect balance of flavours and textures, and tastes SUPER. If you are not fond of the raw taste, steam sprouted chickpeas for 10 minutes or use canned one instead.

SaladPesto Yoghurt Dressing
  • 200 g Sprouted chickpeas
  • 100 g Blueberries
  • 150 g Grape tomatoes
  • 1 handful Arugula
  • 2 tbsp Red pesto
  • 150 g 1.8% Plain yoghurt
  • 1 tsp Lemon zest
  • 1 tsp Lemon juice
  • Salt and pepper to taste
  1. To sprout the chickpeas, rinse and soak the chickpeas for 24 hours. This starts the sprouting process by waking them up with rehydration.
  2. Drain and rinse the chickpeas thoroughly. Place them in a colander over a bowl and cover it with a clean kitchen towel. Set aside at room temperature and out of direct sunlight.
  3. Rinse and drain the chickpeas once every 8-12 hours for 3-5 days, depending on how long you like your sprouted chickpeas. If you prefer your chickpeas cooked, steam them for ten minutes.
  4. Whisk the yogurt, pesto, lemon juice and zest together in a small bowl. Taste and season well with salt and pepper.
  5. Place all the salad ingredients in a large bowl and toss gently with the dressing until well combined.

I love the idea of sprouting chickpeas for easier digestion. What is red pesto? I've made pesto using sundried tomatoes and red peppers, but not sure if these are what you mean. Thanks for another great recipe Angie!

@Cass @foodmyfriend I used raw sprouted chickpeas for this salad. But if you don't like raw taste, you can steam sprouted chickpeas for 10 minutes before using in the salad or simply replace them with the canned ones.

Sprouting chickpeas?...well, that's a new one for me. Love chickpeas in soup, and especially salads. This salad really must taste good with the yoghurt, and mixed berries...but I don't trust that sharp (two thong fork) for eating with it.With my luck, I would stab myself in the mouth, LOL

Seeing you sprouting these beans reminds me of the green beans that i sprouted for science subject way back in primary school, which was also the only time i tried sprouting :)) Your sprouted beans salad looks so cute and the contrasting colors make it look very pretty!

I haven't tried this method for sprouting. Seems so easy and all you need is a colander! Why not! Now, what is red pesto? I haven't heard of it. Is that from sun-dried tomatoes?
