Carrot, Fennel and Strawberry Salad
- inspired by Patty's Food
|
- Clean and dry the vegetables and strawberries. Thinly slice the fennel and carrot. Cut the red onion into thin half moon slices. Cut the large strawberries into 2-3 chunks. Place the cut vegetables on a large serving plate. Add in strawberries and shredded mint leaves.
- Whisk raspberry vinegar and argan oil in a small bowl. Season to taste. Drizzle the dressing over the salad.

I'm so intrigued by this veggie and fruit mix! Sounds tasty.
This is a very outside the box combination for me - would never have thought to combine fennel and strawberries, but it looks gorgeous!!!!
ulala'! I love raw fennel and I often have it thinely sliced with vinnegar and oranges (the Sicilian way). this variation with strawberries sounds simply divine. on my "to try soon" list.
I love the taste of fennel and this salade looks so good.
What a gorgeous looking salad - it's summer on a plate!
Oh Angie, this is such a stunning and colorful salad! The vitamins are just leaping off the plate!
I am so ashamed to say I've never used fennel. This salad is so completely gorgeous! I've said it before, but you are a food artist. The photos are incredible. Fresh is best :)

p.s. with all my technical knowledge, I did upload the "pin" it button, but I must find a way to upload my file w/photos from the pin it button like some bloggers have it! Will check yours out to see how it works!
That's such a colourful and healthy salad...love it!
How light and refreshing, it looks great, Angie! I used to hate fennel, but now I love it ;)
Mmmm, I have carrots and strawberries, now all I need is fennel!
I love your carrot fennel strawberry salad and am thrilled to have inspired you in your kitchen! Thanks for the mention and I will pin this one right now;-)
Very creative and healthy blend here. In fact if it were on the menu at a restaurant I would surely order it-yum! Also, I envy you getting such tiny strawberries because they are more sweet than the larger ones. The ones around here are getting to be as big as plums and not much flavor.
il y a tout ce que j'aime dans cette salade elle est fantastique j'aime beaucoup
bonne soirée
Sounds refreshing! and I have no doubt this recipe is good since it's from Patty :D
This is a combo I never would have thought of. I am very intrigued!
I never would have thought of combining fennel with strawberries! How spring-summery it all looks - and love how you dress it - and present it.
This sounds yummy. I just started using fennel and now I appreciate it.

Hey Angie
What a very beautiful delicious healthy food up there! :O
If you don’t mind, could you post this carrot fennel and strawberry salad photos on a food photography website called http://www.foodporn.net to make others live in a healthier way? :)
Thank you.
this is such a refreshing looking salad. i've never tried fennel before but i know it has a liquorice taste. interesting combination with strawberries!
Ohhh, That salad looks lovely, Angie. So refreshing and healthy too :) Beautiful combination of flavors! Have a great day :)
What a great combination, looks colorful and healthy !!
Raspberry vinegar goes so well with strawberries & veggies, I agree! :) What a lovely lunch with some crusty bread on the side!
MMMMMMMMMMMM,...A georgous creation, dear Angie! :)
Healthy, beautiful and delicious all rolled into one!
This salad looks like the perfect way to use up the gorgeous fresh strawberries I have on hand -- I love strawberry season! :)
This recipe sounds similar to one that I've made many, many times, but mine has over 19 ingredients so it makes it rather laborious. I recall seeing the argan oil when we were in Morocco but sadly I only bought the cosmetic version (very good for dry skin). I will have to try this salad as I adore fennel and combined with the strawberry it sounds divine!
Angie love this salad!
Beautiful salad and presentation.
Mmm, this looks delicious! I have fennel coming in my farm box, and argan oil that I never know what to do with--this is a winner.
This looks so delicious and so simple :-)
So colorful and delicious - love it!
Love the looks of these colorful salad with great refreshing combo! Can't wait to try it! YUM! :)
This is the perfect mixed salad my friend, looks utterly delicious :D

Dear Angie, Great salad! Colorful, flavorful and healthy. Blessings dearest. Catherine xo
Love this fresh and tasty salad!!! I've never heard of Argan oil and I don't think I've even seen it, but I will be looking for it now because I love mixing up oils and vinegars in my salad dressings. Thanks for turning me on to a new ingredient!
Great salad! I love fennel, especially raw like this. And I see it beautifully paired with the strawberries. OK curious about the Argan oil in a vinaigrette. Only have seen it for beauty product (and $$$).
this sounds so delicious! yum!
Dear Angie, I am so glad that you stop by my website so that I could find yours. I love this light strawberry salad. Are you living in HK now as I noticed your blog name? Take care, BAM
Such a quick and lovely salad. Perfect for the season! :)
What a lovely combination! And I like that the salad is so lightly dressed. Wouldn't want to overwhelm those refreshing ingredients with a heavy dressing or too much dressing.
What a colorful and delicious sounding salad. I like the licorice flavor of the fennel combined with the strawberries.
What a perfect summer salad! This sounds amazing and has wonderful color. Yum! Have a great day. Blessings...Mary
This looks incredibly refreshing! I have only tried strawberries in salad once, I should experiment more!
@Bams Kitchen Thanks, Bam, for stopping by too. I guess that you live in HK, that's why my blog name appeared to you as .hk.
Angie, I am always on the look out for a new salad recipe. This one is so unique and summery. Love it!
I've never thought of putting fennel and strawberries together before. I bet it's really good though. I love raw fennel and should eat it more often. Your salad looks really pretty and fresh, too.
Fresh fennel is salad is delicious and I really like the play of sweet and savory in this salad.
Now that's how a salad is done :)
such pretty colors! :D also, i am having trouble viewing your latest post. maybe this is just my problem...
This needs to be in my belly asap! So tasty!
Stunning salade...a "must" this Noël on our table..What would you think of using pomegranite arils or fresh lingonberries...groseilles for the red "pop" of colour?
Not sure about this particular quote from Alton Brown...a tad trop "sexist" in my opinion...although I admire his culinary acumen!..
