These bread rolls are made with a mix of ground whole grain spelt and refined spelt flour. Spelt's nutty flavour doesn't just taste good, it has so many other nutritional benefits that are amazingly good for you.
Like wheat flour, it is sold as both refined / white or whole grain flour. Because it has an extremely fragile glutten content, so don’t expect bread that use spelt to rise high.
Spelt has the right combination of nutrients and can help you with Migraine Headaches, lower your risk of Type II Diabetes, Cardiovascular Disease, and help women avoid Gallstones and Breast Cancer. For an in-depth nutritional profile, please visit whfoods.

Your breads are always absolutely gorgeous, Angie. So professional looking. And when you said that spelt doesn't have a lot of gluten so don't expect a lot of rise, I was surprised how light and airy the dough looked. I'm sure the texture is quite delicious too.

Beautiful! I can't get over the beautiful things you make with whole grains. I'm curious about the refined spelt flour you use though, I can't get that here so I'm wondering if just an all purpose flour would be a good substitute. I love the flavor of spelt though!

I love how many healthy recipes you have! These look fantastic and your rolls came out looking perfect. Dinkel geschliffen?! You're in Germany? Don't you just love how cheap whole spelt is here? I get it for .89/kg and can't believe the prices in the US. I'm going to go browse around some more. :)
Yum! I love breakfast rolls! I've never made my own though, so thanks for sharing this!
Where did you get that "Bio Dinkle Geschliffen"? That "Bio" logo looks so familar.. do you live in Germany? :D

I would like to have these breads for breakfast but I don't want to get up 2,5 hours before because of the proofing. At what stage can you put the dough in the fridge so you can bake the bread just before breakfast?
Dutch greetings, Gerry

In the UK we get it from health food shops, or sometimes a bakery will sell it or give it to you. Some of the large supermarkets with in store bakeries may have it too.
