Linzer cookies based on traditional Austrian Linzertorte, are one of the common Christmas cookies in Germany. They are nutty, rich and SWEET. Traditionally they are filled with black currant jam, but any other fruit preserves can be used to fill the cookies. Rather than almonds, nuts such as hazelnuts, pecan, can be substituted to make Linzer dough.
Created in Linz, Austria in the 17th century, the Linzer torte is the world's oldest torte recipe. Tortes use nuts rather than flour as the main dough ingredient. The Linzer torte features an almond-based crust filled with black current preserves and topped with a lattice crust. In the 19th century, the Linzer torte was adapted into the present-day Linzer cookie.Recipe adapted from Spitzbuben mit Gluehweingelee

- Cut the orange into halves, put the half of the orange face down on the juicer and rotate it to get the juice. Place orange juice, red wine, canning sugar, star anises, cinnamon stick, and cloves in a saucepan. Bring the mixture to a boil and simmer for about 4 minutes. Strain the jelly through a sieve. Set aside.
- Beat butter, sugar, pinch of salt and egg yolk until combined. Add in ground almond, spekulatius spice and flour. Mix all the ingredients together with your hands until you have smooth dough. Flatten the dough into a 5-inch disk. Wrap the disk in plastic wrap and chill until firm, at least 1 hour.
- Line 2 baking trays with parchment paper. Preheat the oven to 180C/350F. Roll out the dough into a 4mm thick round between 2 sheets of wax paper. Cut 2-inch rounds with a plain or fluted cutter and place them on the prepared trays. With half of the rounds, cut a hole from the middle of each round with a heart or flower shaped cutter.
- Bake the cookies for 10-12 minutes, until the edges begin to brown. Allow to cool to room temperature. Spread mulled wine jelly thinly on the flat side of each solid cookie. Dust the top of the cut-out cookies with confectioners' sugar and press the flat sides together. Fill the holes with little more jelly. Store them in your cookie box, separating the layers with waxed paper, and store for up to 2 weeks.

Angie, they're so elegant and festive....the perfect Christmas cookies. Love that you used mulled wine jelly instead of jam for the center.
When I was a kid, I've always loved cookies like these, but even when I'm no longer a kid, I still love them :)
BTW, I'm really worried abt the unbaked jam making the cookie soggy later, will it?
I would devour these in a heartbeat! what a brilliant idea to use wine mulled jelly (inverse the adjectives, sorry) in this recipe!
Angie, these are just beautiful Christmas cookies!

Your linzer cookies are stunning! They sound delicious and I love the mulled wine jelly!
Love this idea!
These are one of my favorites Angie! So pretty and so scrumptious! They should be on everybody's cookie tray.
@wendyywy @ Table for 2..... or more
I wouldn't fill the cookies all at once..or prepare them before serving. So they wouldn't get soggy too quick.
These are picture perfect and totally delicious looking!
I love these and have started making them a few years ago... and LOVE the idea of the mulled wine jelly... I am a traditionalist and have consistently used raspberry - then veered over to red currant... now, I will try this!
:)
Valerie
These are so beautiful and you had me at mulled wine!
Angie - that wine jelly is inspired. It's just what those Linzer cookies needed! (It's just what I need, also) and they are sparkling!
Muled wine jelly!? that sounds terrific Angies! I just made jam last night and this is perfect cookies to go with it. You are such a talented baker! All your baked goods look so good!

I don't think I have the patience to make these cookies, but they look absolutely wonderful!
perfect treats for xmas!
Linzer cookies always make me ooo and aaah because they're so pretty, but for some reason I've yet to taste or make them. Yours are, of course, as beautiful or more as any others I've seen.
Looks pretty and cute...
Angie, I've always loved Linzers ... Wondering how does this mulled-wine jelly taste like ... Interesting!
I have never made these before, but I certainly have enjoyed a few! Yours look so beautiful with all the different cut-out shapes in the center. Thank you so much for sharing with me tonight. I hope you have a wonder-filled Friday!
These are genius! Mulled wine IN the cookie? Does it get any better than that (I don't think so)?! These are beautiful and so perfect looking Angie. I have a feeling mine might not look so dainty on the first try but I'm willing to give it a go (can I DRINK some mulled wine while I make them?).
I love linzer cookies. Yours look absolutely amazing, and I love the filling!!
so flavorful and yummy cookies..beautiful pictures too
I am sure I am not the first to suggest this, but have you ever considered opening up a bakery or a small business with all of your baked goods? You do SUCH a good job and they always look perfect! I am impressed by you over and over again!
I love Linzer cookies! They are beautiful and the texture of the dough is so appealing to me. The red wine mulled jelly sounds just perfect for Christmas!
I've made these kind of cookies once before but not with such a unique jelly filling. They are a beautiful traditional Christmas cookie and I would love to have cookies like this on my table to share for the holidays, thanks for sharing:)
Angie-These Linzer cookies not only look amazing, but with the mulled wine jelly, must be so over the top yummy!
Thanks for sharing!
So pretty! I love the dusting of confectioner's sugar. I made thumbprint cookies with almond flour today. I love the nice texture and flavor it adds.
Gorgeous cookies and as usual I am drooling and salivating now just looking at them thru the screen :)
Angie, the cookies look absolutely divine!
Your cookies look really pretty!
What a beautiful cookie. I have never seen mulled wine jelly. I bet it is wonderful. I would love to try these. Not sure I could get mine to look as pretty as yours, though:)
So pretty those linzer cookies! Can't help drooling!
I cannot begin to tell you how excited I am about these cookies! After being in Germany at Christmas time, I have come across an abundance of delicious cookies. My favorite so far are Hildabrotchen! I love the sound of these Angie! Totally bookmarking!
first of all, that jelly would be amazing on its own. however, i can't say i wouldn't prefer it squished between two cookies. :)
These are one of my favorite Christmas cookies. You did a beautiful job with them Angie:)
These are gorgeous!! And looks delicious!
I just made linzer cookies, but I'd never heard of mulled wine ones! They sound great and look beautiful.
What an elegant filling for a cookie - and how beautiful they look! With all the wonderful cookies I've been seeing around the blogosphere, I am tempted to serve nothing but cookies for Christmas :D
Another yummy creation and how creative to use mulled wine. Love the idea.
Hi, Angie, I made these yesterday, and they're simply adorable. Delicious and perfect for holidays.
Best wishes
