Red cabbage, with an attractive dark purple colour and undeserved bad reputation, is Fat-Free, Cholesterol-Free, and rich in vitamin A, B, C, E. Talk about the perfect weight loss food!
My husband simply frowns on the idea of cooking him some red cabbages. He even dislike the word "Kohl or cabbage in English". He didn't touch a single bit of it. Well, take it or leave it. So red cabbage anyone?
- 2 tbsp Olive oil
- 1250 g Red cabbages, quartered, cored and shredded
- 2 Apples, peeled and cored and chopped
- 1 tbsp Ginger root, finely shredded
- 2 Onion, sliced
- 1 tsp Allspice, ground
- 1 tbsp Mustard seeds
- 80 g Golden caster sugar
- 40 ml White wine vinegar
- 300 ml Apple cider©angiesrecipes
- Heat olive oil in a large pan, add cabbage, apples, ginger, onions, allspice and mustard seeds. Cook for 5 minutes until just starting to wilt.
- Scatter over the sugar and pour in the wine vinegar and cider. Cook, covered, over the low heat for 15 minutes, then remove the lid and turn up the heat to medium. Simmer the cabbage for about 35 minutes, stirring occasionally until all the liquid has evaporated.

You always make the best things Angie. I can't BELIEVE that your husband wouldn't touch it! I never knew that Kohl was another word for cabbage. There is a department store called Kohl's in the US, I wonder if they were naming it after a cabbage?
Braised red cabbage is one of my favorites! I can eat an entire bowl--I find it to be so addictive. The cider, apples, and seasonings all make this a fantastic recipe.
Angie, picture of the cabbage got me craving for it...look yummie and SO tasty with apples...never thought in preparing cabbage this way.

This is one of my favorite ways to eat cabbage. I've never had it with ginger though, I bet it's delicious!
What bad reputation abt red cabbage? I have not braised them in the traditional way but use them in soups before. When I want to cook them, I try to treat them as ordinary green cabbage. I know they taste different but I guess it works, in a way cos the texture is similar.

Tasteless. ;-)) I kept telling my husband it tastes really good and healthy...and he replied: but it's CABBAGE. For him, anything cabbage couldn't be good in taste.

I simply love red cabbage...generally I cooked it just with oil a little bit of sugar and vinegar, but I like the idea of using ginger and the other spices...

I just made braised cabbage last night. It always adds such a nice balance to pork and mash. Perfect sweet and acidic mix. Cabbage is so versatile, I love it.

Hi Angie-what a coincidence, I just happen to have a head of red cabbage sitting in my frig. and I was going to prepare it the same old-same old-way, with diced Granny Smith Apples, and apple cider vinegar, sweet-and-sour way, but your way is fantastic with the ginger. Incidentally, I have the same exact lead glass dish. Would you mind terribly, if I made it with your exact recipe and post it on my blog, linking it to yours? Ooooh, I love cabbage. This sounds delicious! Great flavors for fall! My husband can be pretty adamantly opposed to certain foods too... I am sure I have mentioned them to you before. Sweet potatoes and mushrooms, mainly. He's not big on tomatoes in the form of soups. Unfortunately half the stuff he adamantly opposes are things I enjoy! Sigh... the sacrifices you make for love! ;)
