Fluffy, moist, fruity and delicious, these poppy seed and plum rolls are a real treat. They are perfect for your next birthday party or picnic. For these sweet dough buns, we start with a yeast dough with poppy seeds and prepare a cinnamony plum compote while the dough proves in a warm place until doubled. I set aside about a cup of compote as the serving sauce. Otherwise, they taste just as delicious with a vanilla sauce or a lemon icing.
Plum Compote | Dough |
- 400 g Italian plums (or regular plums)
- 2 tbsp Sugar
- 6 tbsp Water
- ½ tbsp Lemon juice
- ½ tsp Cinnamon powder
- 1 tbsp Cornstarch

- 200 ml Milk
- 60 g Butter (plus more for the pan)
- 400 g Plain flour
- 45 g Poppy seeds
- 2 tbsp Sugar
- ½ tsp Pure vanilla powder
- 7 g Active dry yeast
- 1 Medium egg, at room temperature

- Warm the milk in a saucepan over low heat, add the butter in pieces and allow to melt. Remove the saucepan from the heat. Set aside.
- In the mixing bowl of your stand mixer with a dough hook, whisk together the flour, poppy seeds, sugar, vanilla powder and yeast. Add the lukewarm milk and butter mixture and the egg.
- Mix for 3-4 minutes at slow speed until a rough dough has formed. Increase the speed and knead for a few minutes until the dough has become smooth and elastic. Cover and leave to rest for about an hour until it has doubled in volumn.
- In the meantime, wash the plums, pat them dry, cut them in half and remove the stones. Cut the fruit halves into cubes. Melt the sugar in a saucepan until it has caramelised. Add the cubed plums, 4 tablespoons of water, lemon juice and cinnamon powder. Simmer for roughly 3 minutes, stirring occasionally. Mix the starch with remaining 2 tablespoons of water and add to the fruit. Bring the filling to the boil briefly, then set aside.
- Generously grease a round 30-32cm or a 20x30cm rectangular baking dish with butter. On a lightly floured work surface roll out the dough into a 45 cm x 30 cm rectangle. Spread the filling, reserving about a cup as a serving sauce, on the dough, leaving a border 2 cm wide.
- Roll up the dough sheet from the long side. Cut the roll into 10 slices (9 if you are using a rectangular baking pan) with a sharp knife. Place the rolls in the prepared pan with the cut edge facing upwards, cover and leave to rise for another 30 minutes.
- Preheat the oven to 180C/350F. Bake the rolls in the middle of hot oven for 35 minutes until golden brown. Serve with the reserved plum compote.
