This is a quick and delicious comfort meal in which the eggs are poached in spicy tomato sauce. It's very similar to North African Shakshuka and Mexican Huevos Rancheros. So versatile and adaptable and all you need are pantry staples and a couple of fresh eggs gently poached in tomato sauce. It's really that basic and simple, but if you like, you can add some pancetta and parmesan for extra flavour. Serve it with some homemade bread to mop up the sauce.

- Heat the olive oil in a medium skillet over medium heat. Add the eschalots, celery, parsley or coriander stalks, garlic and chilli and cook for 2-3 minutes until the eschalots are translucent and golden.
- Add the passata, chicken broth or water, salt and pepper. Bring it to the boil. Reduce the heat to low and simmer gently for 10-15 minutes, depends on how saucy or dry that you like the sauce. Make small holes in the pan with your spoon then crack the eggs in one by one. Cook for 5-6 minutes until the whites are set but the yolks are still runny.
- Remove from the heat, top with chopped parsley or cilantro leaves and extra chilli and serve hot with crusty bread.

Beautiful and looks similar to Shakshuka!
...I love eggs and this looks fabulous!
My kind of comfort food. Delicious.
Este plato también lo suelo preparar yo de forma muy parecida, ya sabes que elimino el picante, por lo demás me parece buenísimo. Hay que acompañarlo de un buen pan.
Hello Angie,
It does look delicious, thanks for sharing.
Take care, have a great day!
One of our favorite dishes we call them Eggs in Purgatory they look perfect to me!
Looks like a lovely plate setting. I almost never eat anything red which is very weird given that my people usually cook everything with tomato juice and paprika which actually got its name from our language. My stomach just does not like red.
Looks good
I love shakshuka, so I'm sure I'd love this, too!
I think this dish is delicious and tastes tasty.
Your recipe for poached eggs in spicy tomato sauce sounds absolutely mouthwatering and perfect for a quick and comforting meal. REminds me of shakshuka
That looks like the Spanish breakfast I like
Soulfood! Thank you for the recipe, it looks really good.
This is a very good way to cook eggs.
I'll bet that is really good, it sure looks it.
Gracias por la receta. Te mando un beso.
Immediately thought of Shakshuka :) Love runny yolks and so satisfying to dip some crusty bread in this.
Angie, eggs cooked in tomato sauce are a delight. Of course, you have to have bread on hand as it is the perfect union with this preparation.
Looks delicious.
I'm not a big fan spicy dish, but these eggs looks really delicious!
We will definitely give this one a turn on the menu.
Since I've come home, I have been so hungry in the morning. Like now. This looks delicious. I never thought of eggs in tomato sauce, and maybe I'll try that for supper tonight. Have a great day.

I made this, or something similar last year. It was so good. Thanks for reminding me to make it again!
This did remind me of Shakshuka, looks rich and delicious. This is on my must-try-soon list!
I love your version of this dish! My college boyfriend taught me how to make this, but it was much simpler. I need to give yours a try… It’s one of my favorite suppers on a cold, rainy evening. David (C&L)
My kind of breakfast!
Even more deliciousness here Angie!
