These parsnip chips make a great alternative to storebought potato chips and dip, and are irresistible with a sprinkling of chilli salt and homemade tzatziki sauce. Best eaten on the day they are made, as they can lose their crispiness. If you don't want to fry them, then toss the ribbons with 1 tablespoon of olive oil and bake at 180C/350F for 20-25 minutes. You might have to do this in a few batches.

- To make the chilli salt, combine the sea salt, orange rind, chilli flakes and cumin in a small bowl.
- Use a Y-shaped vegetable peeler to peel long thin ribbons from the parsnips.
- Heat the ghee in a large deep frying pan over medium-high heat. Deep-fry the parsnip, in batches, until golden and crisp. Use a slotted spoon to transfer to a baking tray lined with paper towel. Sprinkle with chilli salt and chopped parsley. Serve chips with tzatziki if using.

@Anonymous It's listed on the ingredient list, 2 parsnips, about 400grams, but you can make as many as you want.

Hi Angie, I like parsnips but my better half doesn't. I think I'd really enjoy these chips! So you have about 10" of snow...a bit more than we do. Is it an unusual amount of snow for you? Is it actually illegal to feed birds where you live? I do understand the thought behind such a law but it would make my wife very unhappy if she couldn't feed and water the birds. I did find that it is illegal to feed them in Bergen Norway...and other countries and local governments discourage feeding birds. I learn something new every day. Take Care, Big Daddy Dave

@David We usually just get a few cm, not more than 10. I am not quite sure it's illegal to feed birds as I still see some neighbours do, but it's advised NOT to feed them.

@Balvinder The parsnip chips stay at least 2 days crispy. On the 3rd day, I just put them in the airfryer for 30 seconds, and they are very crispy again.
I think parsnips are one of the most under-used vegetables. I love their subtly sweet flavor and making chips with them is brilliant. :-) ~Valentina
