You can't beat an old-fashioned tea treat or dessert like this delicious, buttery streusel / crumble cake, starring fresh plump raspberries, Greek yoghurt, almonds and spelt flour- wholemeal spelt flour gives them a fibre boost and adds to the overall nutty flavour. It is fantastic served with dollop of crème fraîche or custard for added indulgence and extra fresh berries that will make afternoon time with the family and friends all the more special.

- Preheat the oven to 180C/350F. Grease a square 26cm or a 20cm x 30cm traybake tin and line with baking paper.
- For the streusel topping, put the ground almonds, spelt flour, brown sugar and butter in a bowl with a pinch of salt and rub together until it forms crumbs. Stir through the flaked almonds and set aside in the fridge.
- Using an electric mixer, cream together the butter, sugar and vanilla until light and fluffy. Add the eggs, one at a time, beating well after each addition.
- Fold in the spelt flours, baking powder and baking soda, then tip in the yoghurt. Fold again until well combined. Scrape the batter into the prepared baking pan. Smooth the surface and scatter over 500 grams of raspberries and top the berries with the crumble topping, followed by the remaining 100 grams of raspberries.
- Bake for 75 minutes to 85 minutes until golden brown and a skewer comes out clean. Cool in the tin for 15-20 minutes, then turn out onto a wire rack to cool completely. Dust with a little of icing sugar if desired. Slice and enjoy!
