King trumpet mushrooms, aka king oyster mushrooms, have become hugely popular for their mild, delicate flavour and nutty, meaty texture. They are not only just delicious, also full of health-supporting antioxidants. The whole mushroom is edible and can be eaten either raw or cooked. Cooking enhances the savory umami flavours. The large stems and caps hold their shape when roasted or grilled, making them a great side dish or light meal. When cutting the mushrooms, try to get slices that include both the cap and stem to best showcase the mushroom’s shape.

  • 2 tbsp Fresh basil leaves, finely shredded
  • 1 clove Garlic
  • 1 tsp Lemon zest
  • 2 tsp Lemon juice
  • 50 g Mayonnaise
  • 1 tsp Hot mustard
  • 2 tbsp Milk
  • Salt
  • 300 g King trumpet mushrooms
  • Olive oil for frying
  • Freshly milled black pepper
  • Parmigiano-Reggiano cheese for topping
  1. Finely shred the basil leaves, peel and press the garlic and mix with the lemon zest, lemon juice, mayonnaise, mustard and milk until smooth. Season with salt.
  2. Slice the mushrooms lengthwise. Heat a skillet over medium-high heat. Add in a little olive oil and fry the mushrooms in batches for 1-2 minutes on each side until golden brown. Season with salt and pepper and drain on kitchen paper.
  3. Arrange the mushrooms on serving plates, grate some Parmesan over and drizzle with the lemon mayonnaise. Sprinkle with the extra basil leaves if desired and serve immediately.

Very lovely, due to incessant rain in last few weeks we have whole forests of shrooms popping up around the yard, and not some small, but giant ones.

Honestly I had to stop when I read the title of the recipe and then I stared at the photos and the ingredients trying to figure out what it is. I'm not a big mushroom person and also don't recognize all the names for cheeses, but it looks delicious.

Esos champiñones son preciosos y la receta que has preparado con ellos muy buena. La salsa que los acompaña es para rebañar el plato.

I've always liked the name 'carpaccio'; less the dish itself, but it's ideal for weight control, so I'm not keeping away from it.

Exquisite flavour profile and presentation - so worthy of a magazine cover! And this basil-infused mayo sauce is such a great idea.

We love all kinds of mushrooms. King trumpet is delicious, just simple grilling/pan-fried with butter, seasoned with salt and pepper
