- Preheat the oven to 180C/350F. Grease or line a 21x10x7cm loaf pan with parchment paper.
- Mix the white spelt flour, salt, baking powder, baking soda, chopped thyme and minced garlic in a large bowl.
- In a separate bowl, whisk together the buttermilk, eggs, egg yolk, and olive oil.
- Fold the wet ingredients into the dry, then add the sundried cherry tomatoes and grated Parmigiano-Reggiano.
- Pour the batter into the prepared pan and bake for 45-55 minutes until a skewer inserted into the middle comes out clean. Turn out onto a wire rack to cool.

Yum, looks like this recipe has most of the ingredients for making my favorite buttermilk pancakes (eggs, buttermillk, etc), except it's turned into bread! I could go for this!

Did you dry your own cherry tomatoes? When I used to get big tomato crops I would dry some. Yum. I love the idea that this is a quick bread, and I bet it is as tasty as yeasted dried tomato bread. Hope July is going well for you. hugs-Erika
