These keto tortillas are made with almond flour and have a soft and pliable texture thanks to the whole psyllium husks. You can easily double the recipe and freeze them to have on hand anytime you need a healthy wrap or Turkish pizza. Layer them in between parchment paper, so you can pull them out one at a time, if needed. They are egg, dairy, gluten-free too. The recipe creates 4 large tortillas, but you can make 6 medium or 8 small ones. Use a tortilla press to shape them if you have one, otherwise, make sure to roll the dough between two pieces of parchment paper.

- Place finely ground almonds, psyllium husks, baking powder, garlic powder and sea salt in a mixing bowl. Mix well.
- Add in lukewarm water, olive oil and mix well, until thoroughly combined. Set aside for 5-10 minutes to let the psyllium absorb all the moisture. Gently knead the dough several times until smooth and pliable and shape into a ball.
- Divide the dough ball into 4 -6 even portions. Place one piece of dough between two pieces of parchment paper. Using a rolling pin, roll out the dough until evenly thin and flat. (If you prefer an evenly round tortilla, just get a large dinner plate or springform ring and place on top of the dough. Using a knife, cut around the edges so you are left with a perfectly round circle.)
- Heat a non-stick pan on medium-high and lightly grease. Place the tortilla on top and cook for 2-3 minutes, before flipping and cooking for a further two minutes. Repeat until all the tortillas are cooked.

My man used to make tortilla in weekends but now that he works in town which is about 3 hours drive and only back on weekend, he is lazy to make it. Lol. We still have some tortilla wrap in the freezer.

Sadly, psyllium is very expensive here so I have never used it, which is sad given that I have seen some nice recipes for savory buns which include them.

Whole psyllium husks is the secret (not secret anymore) to make tortilla pliable. And whole psyllium husks is healthy ingredient too. Yep, I have made wraps using store-bought tortilla before and the tortilla was not soft and pliable enough to roll/wrap. And a lot of soft and pliable store-bought brands are so much "processed" to make their tortilla pliable. Yours is best - made with whole healthy ingredients and soft and pliable.
