White Chocolate Mascarpone Tart with Coconut and Maracuja

With a buttery coconuty crust, rich, creamy white chocolate mascarpone cheese filling and fresh, aromatic passionfruit topping, this sweet easy tropical delight is impossible to resist. It's easy to make and great for a special afternoon treat to satisfy the sweetest craving. The crust can be made up to three days in advance.

 
Coconut Shortbread CrustMascarpone White Chocolate Filling & Topping
  • 160 g White spelt flour
  • 35 g Powdered sugar
  • 1 pinch Salt
  • 110 g Cold butter, cut into cubes
  • 45 g Desiccated coconut flakes
  • 1 Small egg
  • 200 g Lindt white chocolate, melted and cooled to room-temperature
  • 200 g Mascarpone
  • 100 g Crème fraîche
  • 45 g Desiccated coconut flakes
  • 2 Maracuja, halved for topping
  • Lime zest, for topping
  1. Whisk together flour, powdered sugar and salt in a mixing bowl. Add in flaked coconut, cold butter and egg. Mix everything together until mixture resembles fine meal and clumps together. Press the dough into a 20-24cm tart pan with a removeable bottom. Press the dough evenly on the bottom and the sides. Prick the bottom of the dough with a fork and chill for at least 30 minutes.
  2. Preheat the oven to 180C/350F. Bake crust until it turns golden brown, about 25 minutes.
  3. Roughly chop the white chocolate and place them in a a heatproof bowl. Fill a small saucepan halfway with water. Bring to a gently simmer over medium heat. Place the heatproof bowl with chocolate over the simmering water, making sure the bottom of the bowl does not touch the water itself. Stir the chocolate constantly until it is completely melted. Remove and set aside to cool to room-temperature.
  4. Stir together mascarpone and crème fraîche in a mixing bowl. Whisk in melted white chocolate and 40 grams of the coconut flakes until combined.
  5. Spread the cream into the crust and chill at least 4 hours or overnight until set. Garnish the sides with the remaining coconut flakes. Cut maracuja in half and spoon the pulp on the cake, Garnish with lime zest.

Looks lovely! I do not eat mascarpone, but I'd take that white LIndt chocolate anyday! Wishing you a lovely Easter. I did buy orange and strawberry filled chocolate eggs in Lidl for tomorrow afternoon :) Sugar once a week won't kill me, although I have kicked sugar out of my diet too beside gluten.
