Baked Asparagus Frittata with Black Olives and Crème Fraîche

A simple, keto-friendly spring meal that uses green asparagus, spring onions, black olives and crème fraîche and is ready in just 30 minutes. It's delicious fresh-out-of-the-oven, at room-temperature or even cold and needs nothing more with it other than a green salad. It's excellent for a picnic too.
A frittata is something between a quiche and an omelette. And it's designed to use up scraps of this or that and leftover bits of whatever you have in the fridge, so don't be afraid of adjusting the recipe to suit your need. This recipe is based on Marissa's Asparagus Frittata, with a few small tweaks. I use 14 eggs (7 large and 7 small) for my 12-inch cast-iron skillet, if you want to use a smaller 9 or 10-inch one, then 10 large eggs would be enough. Don't over mix your eggs as you don't want to incorporate too much air into the mixture. Otherwise, the frittata will expand and puff up too much.

 
  • 14 Eggs (7 large + 7 small), beaten
  • 100 g Crème fraîche (or sour cream)
  • 1/2 tsp Fine sea salt
  • 1/3 tsp Freshly ground black pepper
  • 35 g Parmigiano-Reggiano, grated
  • 3 tbsp Ghee
  • 2 stalk Green onions, thinly sliced
  • 350 g Asparagus, trimmed and cut into 2-inch chunks
  • 40 g Black olives, pitted
  • 150 g Vintage Cheddar, grated
  1. Preheat oven to 180C/350F. Crack the eggs into a jug. Add crème fraîche, salt, pepper and Parmesan cheese. Whisk until mixture is combined. Set aside.
  2. Heat ghee in a 12-inch cast iron skillet or ovenproof skillet over medium heat until sizzling. Stir in chopped green onions, asparagus and cook a few minutes until bright green and crisp-tender. Add in black olives.
  3. Whisk egg mixture once more and pour over asparagus. Remove from heat and sprinkle with grated Cheddar cheese.
  4. Bake 20-25 minutes, or until the frittata has become golden, puffed and just set. Remove from oven and let stand 10 minutes before slicing into wedges. Serve with some spring salad if desired.

That is a whola lotta eggs, deary LOL The prices have went up here for eggs as well, so it is 2,5 euro or even 3 for a carton of ten. Usually, I wouldn't give a flying schmuck about it as I hadn't eaten eggs before,but glutenfree recipes often require an egg and I cannot always use the flax or chia replacement.
