Buttery, flaky smoked trout prepared in this manner is a wonderful variation of tartare. Crème fraîche, wasabi paste and lemon juice is mixed with fresh smoked trout and top with a fruity salsa made avocado, mango, red onion and chives. You can serve it on some freshly baked bread or on crunchy lettuce leaves if you want to go low carb. It makes an easy yet perfect starter or as a light dinner.

- Clean lettuce hearts, wash, shake dry and remove individual leaves. Cut smoked trout into small cubes and mix with crème fraîche and wasabi. Season with lemon juice, salt and pepper.
- For the salsa, peel the mango, remove the flesh from the core and cut into small cubes. Peel and finely dice the onion. Halve and pit avocado, remove flesh from skin and dice finely. Wash chives, shake dry and cut into fine rolls. Mix diced avocado, mango, red onion and chopped chives. Add in olive oil, lemon juice, chilli pepper if using, salt and pepper.
- Place lettuce leaves on a large platter and place the smoked trout tartare on top. Spread the salsa over it, and sprinkle with sesame seeds.

I love my fish smoked, so together with the avocado and salsa dressing, this sounds so tasty. Mango is generally something I can take or leave, I'm not a big fan one way or the other, however, it probably complements the other flavours really well in this recipe! :)
