Jazz up a humble can of omega-3 fatty acids rich tuna with this easy avocado tuna salad recipe. Silky avocado adds creaminess that's cut with a hit of tanginess from caper apples and a pleasant bitterness from radicchio. Perfect for a quick and light lunch or dinner. You can easily turn this simple salad into a more substantial, hearty, texture-rich dish by adding some cooked whole grains (such as quinoa, barley, or buckwheat).

- Place the garlic, anchovy, lemon juice, Worcestershire sauce, mayonnaise, Parmesan and water in a processor, and process until you have a loose dressing. Season with freshly milled black pepper.
- Wash the radicchio and spin it dry. Tear the leaves smaller if necessary. Halve and pit the avocados, remove the flesh from the skins, cut into wedges and arrange on a serving platter with the radicchio and tuna.
- Top with caper apples, chopped dill and pomegranate seeds. Serve with the prepared caesar dressing.

ReplyDeleteA very colourful and appetizing salad I shall certainly try - like both radicchio and avocado . . . That said I am keeping my usage of tuna well-and-truly down because of the mercury problem associated with it. No wish to get Alzheimer's or a number of other diseases. A fact which I only learned at lectures a few days ago - salmon is safer because the fish has a smaller mouth and ingests less 'trouble' - fact !!!
