Bitter endives, distinctly citrusy kumquats, sweet and sour pomegranate and briny Feta form the basis of this salad full of intense flavours. A fabulous salad or light lunch. Besides Feta, the endives pairs really well with blue cheese too.
The bitter substances in Belgian endives stimulate the production of bile in the liver and digestion, especially of fats. They also prevent cravings by curbing the appetite.

- For the dressing, whisk together the yoghurt, mustard, lemon juice and mint leaves together. Taste and season with salt and pepper. Chill until ready for use.
- Trim and divide the Belgian endives into individual leaves, cutting out the stalks. Arrange the leaves in a fan shape on a plate. Place sliced red onion, sliced kumquats and pomegranate arils on top of endive leaves.
- Crumble the feta over the salad and decorate with a few mint leaves. Serve the dressing on the side.
