Keto Cucumber Sandwiches with Goat Cheese and Black Olive

Looking for easy, healthy, delicious, keto-friendly and gluten free snack or lunch ideas? These breadless cucumber sandwiches have got you covered. I have cut the cucumber horizontally, but you can simply slice it into rounds. Due to the high water content, cucumbers are a real slimming treat. 100 grams of cucumber provide just 12 kilocalories. In addition, cucumbers contain the potassium, iron, zinc and fluorine and some vitamin C. And with the fresh, creamy Chavroux goat cheese, there is also satiating protein between the slices. If you don't like olives, sundried tomatoes would be a great alternative.

 
  • 2 Cucumbers
  • 15 g Chives, chopped plus extra for garnish
  • 200 g Soft goat cheese (I used Chavroux)
  • 150 g Pitted black olives, chopped
  • 2 Garlic cloves, finely chopped
  • 2 tbsp extra virgin olive oil
  • Salt and freshly milled black pepper
  • 1 tsp Sesame seeds, optional
  1. Wash and clean the cucumbers, divide each into 3 pieces and cut each into 4 slices about 1 cm thick lengthwise.
  2. Wash the chives, shake dry and cut into thin rings. Crumble the goat's cream cheese and mix with half of the chopped chives. Set aside.
  3. Chop the black olives and mix with olive oil, salt and pepper. Peel and finely mince the garlic cloves and mix together.
  4. Place 8 cucumber slices on a platter and top each with olives, top each with another cucumber slice, spread some fresh goat cheese, sprinkle some chopped chives and finally cover each with one more cucumber slice. Sprinkle the top with some sesame seeds if using, and garnish with extra chives.

  22. Angie, Great idea for me with my dietary limitations... Peel the green off the cucumbers, add goat cheese and I'd try the sun dried tomatoes in olive oil in place of the olives. Don't care for olives and I can't eat the skin of cucumbers. Nevertheless, I can play with the cucumber base to make something that will fit my needs. Of course, my wife would love the recipe as you made it! Take Care, Big Daddy Dave
