Lupin Salad with Black Olives and Tomatoes

Lupin (aka lupine or lupini) are a legume enjoyed in the Mediterranean region and they’re also very well known in Middle Eastern countries like Jordan and Egypt. They are high in protein, fibre, potassium, magnesium and many other minerals and vitamins. Around the same size as fava beans, these yellow legumes have a sweet, nutty flavor and firm, hearty texture. They are a nutritional powerhouse with nearly double the amount of protein that's in chickpeas.
Discover the delights of lupin beans in this colourful, nourishing salad. High in protein, lupin beans and boiled eggs together, make this meal deliciously healthy and filling. You can add or substitute other beans or legumes such as white beans, chickpeas, and French lentils, but keep the boiled eggs for nutritional balance.

 
SaladDressing
  • 1 jar / 600 g Lupin beans, drained
  • 1 Small red onion, peeled and sliced
  • 2 Tomatoes, cut into wedges
  • A handful of black olive
  • 20 g Flat parsley, chopped
  • 2 Eggs, boiled to your liking
  • 1 tsp Sumac, optional (I used it simply because I have them in the pantry)
  • 60 ml Extra-virgin olive oil
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Lemon juice
  • 1 clove Garlic, minced
  • Sea salt and black pepper
  1. In a mason jar, add olive oil, apple cider vinegar, freshly squeezed lemon juice, minced garlic, sea salt and black pepper. Screw the lid and shake the jar vigorously to mix the ingredients.
  2. Remove the shells of lupin beans if you don't like the chewiness of thick skin. Simply squeeze the bean between your thumb and index finger into a bowl, the skin should come right off with a little force.
  3. In a large salad bowl, add drained lupini beans, red onions, sliced tomatoes, and chopped parsley. Sprinkle the salad with sumac and drizzle with the prepared dressing. Toss gently to combine. Transfer them in a large platter and top with eggs and black olives.

  2. I've seen Lupin flour at the Co-Op awhile ago and the price was crazy high. The bean itself though, I'd buy that to try for sure. LOVE stuff like this. So fun to play.

    My husband is from Egypt and YES lupine is something he loves ! I've never seen them in a salad. His family just eats them from the jar. Can't wait to try this Thanks Angie---It's Judee from Gluten Free A-Z Blog.

  30. I have never seen or heard of Lupin Beans before, however I shall definitely have them on my radar in time for summer salad season.

    A salad isn't a salad without hard boiled eggs that's for sure, so I was pleased that you included them in this dish, although I generally prefer mine a little firmer with none runny yolks. Hard boiled is just about the only way I will eat eggs and then I really enjoy them for some strange reason!

  34. Your images came first, before I started reading and saw what it look like fava beans (love fava beans by the way) except they are yellowish. And there we are, you mentioned fava beans in your post! Next time I see lupine around, am gonna try it.
