A light and tender spelt poppy seed cake bursting with orange flavour that will keep you coming back for another slice. Topped with a thick orange glaze and salted, roasted pistachios, this buttery and seedy cake is perfect for the ultimate treat alongside a cuppa.

- Line a 20-22cm loaf pan with parchment paper. Preheat the oven to 180C/350F.
- Place the butter, erythritol or sugar, vanilla powder and salt in a bowl. Use a hand mixer to beat until light and creamy. Stir in one egg at a time and continue mixing until the mixture is lighter in colour. Add in the flour, potato starch, baking powder and poppy seeds and stir into the mixture.
- Scrape the batter into the prepared pan. Remove from the oven and prick the cake with a wooden skewer. Pour 200 ml of orange juice over the warm cake. Lift the cake from the pan and parchment paper, and leave to cool on a wire rack.
- Mix the icing sugar and remaining orange juice to make a thick glaze, spread over the cake, sprinkle with pistachios, leave to dry.
