Persimmon Salsa

If you like fruity chunky salsa, you definitely need to try this one with persimmon and optional pomegranate! Use ripe but firm fuyu persimmon for the best result. If you don't like cilantro, use mint or even parsley. Use half of jalapeno if you can't handle the heat. Not only is it delicious, it’s also quick and easy to make. It can be made up to one day ahead. Cover and refrigerate. Bring to room temperature before serving.

 
  • 300 g Fuyu persimmons, diced
  • 1 Medium red onion, finely diced
  • 1 Small jalapeno, deseeded and finely chopped
  • 20 g Cilantro, chopped (or mint leaves)
  • 80 g Pomegranate arils
  • 1 Lime, juiced
  • 1 Garlic clove, finely chopped
  • Sea salt and freshly milled black pepper
  1. Finely chop the persimmons, red onion and jalapeno. Place everything in a bowl.
  2. Chop the cilantro. Add to the onion mixture together with pomegranate arils, lime juice and garlic.
  3. Mix the salsa well. Taste, adjusting salt, pepper and lime. Let rest for at least 30 minutes before serving with some tortilla chips or rice crackers. It makes a nice side with grilled meat or fish too.
