Tahini Cucumber Gazpacho

During the summer months when it’s too hot to even think about cooking, this cold tahini cucumber soup comes to the rescue. Simply toss a handful of ingredients in a blender and, before you know it, you have something cool and refreshing yet surprisingly satisfying for the lunch! It's naturally gluten-free, dairy-free and keto-friendly.

 
  • 70 g Tahini, well stirred
  • 60 ml Cold vegetable broth or water
  • 2 tbsp Extra-virgin olive oil, plus more for garnish
  • Juice of 1/2 lemon
  • 15 g Fresh basil leaves, plus more for garnish
  • 20 g Cilantro
  • 1x400 g Large English cucumber, unpeeled and roughly chopped
  • 6 Cornichons
  • A few baby pickled onions
  • 1/3 tsp Sea salt
  • Freshly ground black pepper
  • Paprika flavoured crispy peas (or croutons or crispy chickpeas)
  1. Place all the ingredients, except the crispy peas, along with salt and several grinds of black pepper, in a high-speed blender. Blitz until completely smooth, stopping to scrape down the sides of the blender, as needed. Taste and season with additional salt and pepper, as needed.
  2. Pour the gazpacho into a jug and transfer to a fridge to completely chill, at least 1 hour and up to 1 day. Taste again and season with additional salt and pepper, as needed, before serving.
  3. When you are ready to serve, divide the gazpacho among bowls and top with the crispy peas. Garnish with a few basil leaves and a drizzle of olive oil.
