Sweet and Sour Baby Cucumber Salad

A quick and easy cucumber side salad with a lot of flavour and perfect as a cooling element to any curry or an accompaniment for a summer grill. If you can't find baby cucumbers, just use regular one (English or Persian cucumbers are all good) that are deseeded and sliced.

 
  • 400 g Baby cucumbers, halved
  • 3-4 Cherry radishes, cut into wedges (optional)
  • 30 g Chives, cut into 1.5-inch chunks
  • 1-2 tbsp Cilantro, chopped (optional)
  • 2 tbsp Rice wine vinegar
  • 1 tbsp Honey
  • 1 tbsp Toasted sesame oil
  • 2 tsp Soya sauce (I used Kikkoman gluten-free)
  • 1 tsp Fish sauce
  • 1 Garlic clove, peeled and minced
  • 1 Long red chilli pepper, deseeded and finely chopped
  1. Place halved baby cucumbers, radishes wedges, chives and cilantro in a medium bowl.
  2. Whisk together the vinegar, honey, sesame oil, soya sauce and fish sauce in a bowl. Stir in minced garlic and chopped chilli pepper.
  3. Pour the dressing into the salad. Toss gently to combine.

  6. Sounds marvelous. You know I've been cooking Asian at home more and more, and I often like to serve a cucumber salad along with the other dishes. So quick and yet so tasty. I'm looking forward to adding this dressing to repertoire!
