A quick and easy cucumber side salad with a lot of flavour and perfect as a cooling element to any curry or an accompaniment for a summer grill. If you can't find baby cucumbers, just use regular one (English or Persian cucumbers are all good) that are deseeded and sliced.
|
- Place halved baby cucumbers, radishes wedges, chives and cilantro in a medium bowl.
- Whisk together the vinegar, honey, sesame oil, soya sauce and fish sauce in a bowl. Stir in minced garlic and chopped chilli pepper.
- Pour the dressing into the salad. Toss gently to combine.
...a fresh summer treat.
ReplyDeleteLooks lovely and green! We usually pickle them cucubabies. Tell me fish sauce does not have fish in it LOL

ReplyDeleteEnsaladas frescas es lo que ahora apetece, no le pondría todos los ingredientes, pero sí la mayoría. El punto agridulce nos gusta mucho.
ReplyDeleteSounds marvelous. You know I've been cooking Asian at home more and more, and I often like to serve a cucumber salad along with the other dishes. So quick and yet so tasty. I'm looking forward to adding this dressing to repertoire!
ReplyDeleteI usually slice my cucumbers into cubes or rounds, but I like you long skinny slices-they give the dish a unique look.
