This easy summer salad is simple yet packed with flavour. A great way to enjoy summer produce from the farmer markets. I kept the salad very simple with just greens and seasonal fruit, but you can throw in some coconut chips, macadamia nuts, cheese, and avocado if desired. Passionfruit vinaigrette, quick and easy to make, brings an unexpectedly sweet and tart twist to this simple salad.

- Place all the ingredients for the dressing in a jar or a bowl. Close the jar and shake to combine.
- Arrange the salad mix in a large platter. Top with sliced star fruit, red currants and chives. Garnish with edible flowers if using. Drizzle with passionfruit vinaigrette. Gently toss together and enjoy!

ReplyDeleteLooks very pretty on the plate! Sadly, I have never had me either passion fruit nor star fruit. We do not have a lot of exotic fruit on offer here and even if we had they would be expensive as hell, methinks.
