Romaine Heart Salad with Goat Cheese and Red Lentil Vinaigrette

Delicious as a snack, or starter or even as a light lunch: try this simple yet deliciously filling salad with Romaine hearts, soft goat cheese and spicy lentil vinaigrette - seasoned with thyme and chilli!
Romaine Hearts are the center leaves of Romaine lettuce. Smaller, more yellow, and sweeter, these leaves have a delicious flavour and tender texture that is perfect for salad.

 
Red Lentil Vinaigrette
  • 3 Romaine hearts, halved lengthwise
  • 180 g Soft goat cheese (I used Soignon)
  • 3 tbsp Whipping cream
  • 3 tbsp Water
  • 1 tbsp Parsley, chopped
  • 3 tbsp Olive oil
  • 1 Red onion, peeled and finely chopped
  • 1 tsp Thyme leaves
  • 1 Bay leaf
  • 125 g Red lentils, rinsed
  • 120 ml Water
  • 120 ml Carrot juice
  • 4 tbsp White wine vinegar (or white balsamic)
  • A pinch of chilli
  • Sea salt and black pepper
  1. Wash the lettuce hearts thoroughly, drain, shake dry, cut into half lengthwise and arrange on a large platter.
  2. Roughly chop the cheese, and place them in a small food processor with whipping cream and water. Spread the creamy cheese mixture over the cut sides of the lettuce hearts.
  3. Heat the olive oil in a pan and sauté the onion over a low heat. Add the thyme, bay leaf and red lentils and water. Cover the lentils and simmer gently for about 8-10 minutes until al dente. Season to taste with chilli, salt, pepper and reheat gently.
  4. Spread the dressing over the lettuce hearts, sprinkle with chopped parsley. Enjoy!

    I really need to use lentils more often, as I like them so much. But I would’ve never thought to put them in a salad like this. Funny thing? I just bought two packages of those little gem lettuces on Sunday. Maybe it was the gods telling me I needed to make this. David (C&L)
