Purple asparagus are much fatter than green asparagus, but much sweeter and more tender than regular asparagus. If you ain't a fan of green asparagus because of their earthiness or grassiness, then you might want to give it a second chance, and try some white or purple asparagus.
To retain the vibrant purple colour, it is best to enjoy purple asparagus RAW or cook them just until tender crisp, 1-2 minutes. Interestingly, adding ‘acidic’ dressings using lime or lemon juice, or white wine or apple cider vinegar helps intensify the beautiful crimson hue.
| Pinenut Vinaigrette |
- 500-600 g Purple asparagus, washed and trimmed
- 2 tbsp Olive oil
- Sea salt and freshly milled black pepper
- 1 tbsp Chives, chopped

- 2-3 tbsp Pine nuts, toasted and roughly chopped
- 1 tsp Dijon mustard
- 1/2 tsp Maple syrup
- 3 tbsp Freshly squeezed lemon juice
- 5 tbsp Extra virgin olive oil
- Sea salt and freshly milled black pepper

- Rinse the purple asparagusand and snap the woody ends off (if you bend them they will break at the right point) or cut an inch from the bottoms and discard.
- Heat a grill pan over high heat. Place purple asparagus in a large plate. Add in olive oil, salt and pepper. Gently mix to coat.
- Chargrill asparagus in two batches for 1-2 minutes. Don't cook too long or they will turn green( it’s still delicious and full of nutrients). Transfer to a serving plate.
- Place all the ingredients for the dressing in a jar with a lid and shake to combine. Pour the dressing over the asparagus. Garnish with chopped chives.

I am crazy about asparagus. I had an asparagus omelet yesterday that was MARVELOUS. I made purple asparagus earlier in the week, but it seemed to lose much of its color.
