Charred Purple Asparagus with Pinenut Vinaigrette

Purple asparagus are much fatter than green asparagus, but much sweeter and more tender than regular asparagus. If you ain't a fan of green asparagus because of their earthiness or grassiness, then you might want to give it a second chance, and try some white or purple asparagus.
To retain the vibrant purple colour, it is best to enjoy purple asparagus RAW or cook them just until tender crisp, 1-2 minutes. Interestingly, adding ‘acidic’ dressings using lime or lemon juice, or white wine or apple cider vinegar helps intensify the beautiful crimson hue.

 
Pinenut Vinaigrette
  • 500-600 g Purple asparagus, washed and trimmed
  • 2 tbsp Olive oil
  • Sea salt and freshly milled black pepper
  • 1 tbsp Chives, chopped
  • 2-3 tbsp Pine nuts, toasted and roughly chopped
  • 1 tsp Dijon mustard
  • 1/2 tsp Maple syrup
  • 3 tbsp Freshly squeezed lemon juice
  • 5 tbsp Extra virgin olive oil
  • Sea salt and freshly milled black pepper
  1. Rinse the purple asparagusand and snap the woody ends off (if you bend them they will break at the right point) or cut an inch from the bottoms and discard.
  2. Heat a grill pan over high heat. Place purple asparagus in a large plate. Add in olive oil, salt and pepper. Gently mix to coat.
  3. Chargrill asparagus in two batches for 1-2 minutes. Don't cook too long or they will turn green( it’s still delicious and full of nutrients). Transfer to a serving plate.
  4. Place all the ingredients for the dressing in a jar with a lid and shake to combine. Pour the dressing over the asparagus. Garnish with chopped chives.

  10. That is good information about adding something acidic. We planted purple asparagus last year, so won't be able to harvest until 2026, but I will have to remember this post!

  22. I am crazy about asparagus. I had an asparagus omelet yesterday that was MARVELOUS. I made purple asparagus earlier in the week, but it seemed to lose much of its color.

    We usually get purple asparagus in our market, but I haven’t seen any yet this year. I love it for its color! And with this vinaigrette? I bet it’s perfect. David (C&L)
