Grilling radicchio helps temper the bitterness in this hearty and beautiful vegetable. Radicchio and fresh goat cheese pair well and compliment each other. Candied walnuts and juicy pomegranate seeds give a distinctive lift and touch of sweetness to this warm salad. It is simple and quick to prepare and makes an impressive and exciting side dish that will liven up any meal.

- Remove and discard outer radicchio leaves that appear wilted. Wash and dry the radicchios. Slice heads of radicchio lengthwise into even quarters if small, and sixths if slightly larger.
- Brush sliced edges with olive oil and season well with salt and pepper. Grill over medium-high heat 3-4 minutes on each side or until edges are slightly charred and have softened slightly. Remove from grill to large platter. You can do this in your grill pan too.
- Crumble fresh goat cheese over warm radicchio. Sprinkle with baby arugula leaves, pomegranate seeds and candied walnuts. Top everything with a drizzle of balsamic vinegar to taste.
