Radicchio Salad with Blueberries and Parmesan

This is truly a superfood salad filled with savoury and fruity ingredients that are both healthy and tasty. The bitter substance lactucopicrin from radicchio stimulates the production of digestive juices in the stomach, liver and pancreas. King of all the cheese - real, authentic Parmigiano Reggiano is rich in vitamin B12, calcium, zinc, and other antioxidants and minerals that your body loves. Walnuts are rich in heart-healthy fats and high in antioxidants. Packed with antioxidants and phytoflavinoids, blueberries are also high in potassium and vitamin C. Not only can they lower your risk of heart disease and cancer, they are also anti-inflammatory.

 
SaladDressing
  • 70 g Walnuts, toasted
  • 1 Small radicchio, washed, leaves separated
  • 150 g Blueberries
  • 75 g Parmigiano-Reggiano
  • 1-2 tbsp Flat parsley, chopped
  • 60 ml Extra-virgin olive oil
  • 15 ml Walnut oil
  • 2 tbsp Red wine vinegar
  • 2 tsp Dijon mustard
  • 1 clove Garlic, minced
  • 1/2 tbsp Maple syrup or honey
  • Sea salt and black pepper
  1. Preheat oven to 180C/350F. Place walnuts on a small baking tray and roast for 10-15 minutes or until golden brown. Set aside to cool slightly.
  2. Add all the ingredients for the dressing into a small bowl or glass jar and whisk until combined. Alternatively you can add all of the ingredients into a mason jar and shake until combined.
  3. Place radicchio leaves in a serving platter. Top with blueberries, Parmigiano-Reggiano cheese and parsley. Crush some toasted walnuts over and drizzle with red wine dressing to serve.
