Easy, flavourful, and ready in 30 minutes, this skillet chicken cutlet in creamy, cheesy sun dried tomato sauce recipe is a crowd pleaser. The sauce is not only great for chicken, also perfect for salmon or shrimp. Be sure to use real, freshly grated parmesan cheese, which makes the difference to the texture and flavour of the sauce. Fantastic over some pasta or with zoodles if you are on keto.

- Season the chicken cutlets with salt and pepper. Heat ghee in a large skillet over medium heat. Add the chicken and cook, turning once, until browned, about 8 minutes. Transfer to a plate and cover to keep warm while you make the sauce.
- Add garlic, chilli flakes and sundried tomatoes to the pan. Cook, stirring, for 1 minute. Increase heat to high and add white wine. Cook, scraping up any browned bits, until the liquid has mostly evaporated, about 2 minutes. Add in chicken broth, cream, Parmesan and any accumulated juices from the chicken. Cook for 2 minutes. Taste and season.
- Return the chicken cutlets to the pan and turn to coat with the sauce. Serve the chicken topped with the sauce and chopped herbs.

ReplyDeleteDo you sundry your tomatoes yourself? Some members of my family do it in a dehydrator with garlic and then mix them with olive oil for keeping over winter, but I hate the smell of basil in it.

ReplyDeleteI am preparing chicken cutlets quite often and it is very popular way for serving chicken here although I have never tried with dried tomatoes :-)
ReplyDeleteChicken Cutlets are definitely a huge favourite here, I usually serve them pounded until very thin and breaded with a squeeze of lemon juice (Hungarian-style) but I think your version is elevated to dinner party status. I’ll definitely bookmark this as I’m struggling lately to figure out whst to cook for friends when they come for dinner.
