Hi Angie, we were away for a couple of days so I wasn't able to get to all my favourite blogs! I love kale salad and we've been doing one which macerates the kale in lemon juice and honey to soften it. My hubby and I are both smitten and can't get enough, but I sense that if I don't change it up a bit he may be over-dosing on it. This recipe will be a lovely change, particularly since apples are in season now.
