Bulgur Patties with Lemon Balm Yogurt

When you're in need of a healthy and delicious meatless dinner, you can always turn to these fiber-rich, flavourful and delicious bulgur patties with an oriental touch. If you don't have lemon balm in your garden, substitute it with mint and lemon zest.

Bulgur Patties with Lemon Balm Yogurt

adapted from Küchen Götter
  • 250 g Bulgur
  • 250 ml Vegetable stock or water
  • 1 Shallot, diced
  • 1 clove Garlic, minced
  • 3 tbsp Olive oil
  • Salt and pepper to taste
  • 1 tsp Cumin powder
  • 2 Eggs
  • 4-5 tbsp Breadcrumb
  • 200 g Plain yogurt
  • Lemon balm leaves, chopped
  1. Bring the vegetable stock to a boil. Turn the heat off and ad in the bulgur. Let soak for 15 minutes.
  2. Peel and finely dice the shallot and garlic clove. Cook in 1 tablespoon of olive oil in a small saucepan over medium heat, stirring occasionally, and season with salt, pepper, and cumin powder.
  3. Season yogurt with salt and pepper. Fold in chopped lemon balm leaves.
  4. Stir together the soaked bulgur, eggs, prepared shallots, garlic, and breadcrumb. Season to taste. Form the mixture into 16 patties. In a large skillet, heat the rest of olive oil over medium-low. Cook patties until browned and firm, 5 to 6 minutes per side. Serve with lemon balm yogurt.

  44. Angie, you have so may uses for Bulgur Wheat...just incredible. Absolutely loving these awesome patties. I keep mentioning that I will make something different with my bulgur and lucky for me, I have all the ingredients on hand. The only thing I will not be able to get is the lemon balm leaves, so I will substitute it for grated lemon and perhaps some lemon juice?

  62. My mom always grew lemon balm--I remember it taking over the yard! She never did anything with it though (although as a kid, I loved rubbing the leaves between my fingers and smelling them!), so it never occurred to me to cook with them. I bet the sauce is so fragrant!
