Curry Rice Salad with Fish and Papaya


Rice salads are easy, delectable and infinitely versatile. This curry rice salad is prepared mainly with Basmati rice, peas, pan-seared walleye fillet tossed with curry powder and olive oil, and finished off with papaya. It's perfect for a lunchbox, a picnic, and even great as a side to a summer BBQ party.

  • 125 g Basmati rice
  • 75 g Frozen peas
  • 2 tsp Curry powder
  • 1 tbsp Extra virgin olive oil
  • 2 tsp Lime juice
  • Salt and freshly ground black pepper
  • 180 g Walleye fillet, pan-seared
  • 1 tsp Butter
  • 50 g Carrot, diced
  • 1/3 Red onion, chopped
  • 1 Papaya
  1. Cook rice following packet directions. Add the peas 2 minutes before the end of cooking. Drain. Rinse under cold water. Drain well. Place in a large serving bowl. Add the curry powder, olive oil, lime juice, salt and freshly ground black pepper. Gently stir to combine.
  2. Season the fish with salt and pepper. Melt the butter in a non-stick pan over medium heat. Cook the walleye fillet until golden brown. Remove fish and cut into half-inch pieces. Dice the carrot and red onion.
  3. Add the fish, carrot, and red onion to the rice. Halve the papaya lengthwise and remove the seeds. Scoop out some flesh and add into the rice salad. Fill the papaya shells with rice salad or just serve them in a bowl.

  4. My husband is always making fun of me cause I like stuffed things; stuffed pineapple, stuffed peppers, stuffed zucchini, stuffed aubergines etc... I am able to stuff virtually anything if this means to put two of the kind together:)
    So, yes, I like your recipe a lot!!! That papaya looks amazing!

  8. I just love your photos and presentation! I have tried quinoa, couscous, orzo pasta, bulgar wheat and many thing for salads. We have rice all the time why haven't I made a salad of rice yet? Maybe I was waiting for this perfect recipe! Yum!

  13. This dish is soooo beautiful! I love papaya and using it to present the meal instead of a plate is wonderful! I'd never thought of making something like this, which looks so ambitious, as a BBQ or picnic type dish, but you make it sound so easy that it probably could be done. Are there other kinds of fish that you could use instead of walleye, as that one is not very common here?

    I just found your blog and love it. Such beautiful photos! It makes me want to rush to the store to purchase ingredients and cook up a storm. I am really interested in the Vermont Spelt recipe. What size are your round and oval proofing baskets? I found a website with great prices for the baskets with lots of sizes to choose from -- 4lb down to 8oz. I have no idea what to purchase. Would you be able to advise -- 1.1 lb or the 2.2 lb baskets? I'm sure I won't be making a 4lb loaf of bread and I could gobble down the 8oz. :) Thanks, Annette
